Famous Justin Pan Mee

Haha, I really can't think of a better title!

I dunno if any of you know I have this passion and interest in cooking. Probably some of you knows and maybe many will go, "Huh?! Justin cooks???". We shall see the responds I get.
Since young I've always liked to cook, anything. I started cooking maggi mee pretty young. Isn't that like the first food or maybe second we attempt to cook when our parents allow us to? I can't really remember whether it was the egg or maggi first. Hah or maybe both together?

I'd always experiment and play around with the food I cook like adding in additional seasoning or ingredients. I remember cooking maggi and adding in lots of salt and pepper! The result? Disaster. Hey, but I finished that bowl of maggi, just because I was the one who cook it.

Then I slowly started off with many other things. It wasn't that much until I left high school. Basically cos I have more time and freedom to do anything I want. Not forgetting having a car to go out hunting for the ingredients needed!

I started off more like a cheat! Why? Cos I used many instant packs. Like, instant curry, instant soup, instant chicken seasoning, instant black pepper sauce... All that you can get from the supermarket. Oh and also not so fresh chicken, fish, meat from the supermarket (Giant).

I can't lie but it taste awesome right! Haha definitely thanks to those instant packs. Now that's all history..

Ever since helping out the restaurant, I learn a lot more about cooking. I listen to conversations by the sifus or the workers. Then I note it down and keep it for my hungry tummy! I love to eat, good food! I'll pass for terrible food unless I do not have a choice. So lately I've been cooking for my lunch. Just a small portion enough to satisfy my tummy. No, I don't cook for others at the moment until I can master the food I cook. I've tried cantonese style noodles 2 days ago. Then I fried noodles the next day but totally failed! Ha-ha.

Today, I decided to cook one of my all time favorites! No prizes for the guess - it was coffee shop PAN MEE. Pan Mee is just basically flour noodles.

Oh, why noodles everyday? Cos I usually have rice at night and what else is there to eat right. Also because I like noodles! A little scared of wantan mee already though.
Ok now I'm gonna share the recipe and result of my pan mee which I named "Famous Justin Pan Mee".

It's very simple. The dough and the soup is most important! I did it all in less than 20 minutes.

First I made the dough.
Ingredients :
1. Wheat flour
2. Egg
3. Water
4. Salt
5. Pepper
6. Oil
Simple stuff! You can get these ingredients any where right. I believe it is all available in Aussie too =)

Ok here, I didn't measure the flour and all. I just put in some flour into a mixing bowl creating a well at the center. Break an egg in or any amount you want according to how much flour you're using. Add in a pinch of salt and pepper and then a teaspoon of cooking oil. I didn't use a mixer since it wasn't much. Mixed it up with my hand then slowly adding water in until I get a firm dough. If you've added too much water, which makes it rather sticky then you can add in a lil more flour. Continue kneading the dough until it's done. How to know it's done? When it's not sticky and it's firm then it's done. Cover it with a towel or cloth then keep it in the fridge until your tummy is calling. It's best to keep it refrigerated for at least an hour to let it set.

Now the soup. The best if you can boil the soup with chicken/pork bones then add in ikan bilis. Ikan bilis is the must in this! If you don't have it, it's just not complete. Add salt and pepper or any other seasoning to taste. Add in some seafood for better flavour (eg. flower crab).

Once it's done, bring out your dough then boil some water in the wok or pot to cook the noodles (pan mee). Some people will roll the dough in the machine and shred the noodles thinly. But that's not what I like. I prefer to just tear the dough into the pieces and throw it into the boiling water. When it floats then you know you can take it out and serve!

You can put it whatever meat you want into your pan mee, I prefer it plain with just some fried ikan bilis and fried minced pork.

New baby in the House!

Hello hello!

It's been long since I posted anything in this space.

There is just so much to blog about but no, I won't pour it all in this post. Come to think of it, it has not been a year since I blogged but so much have already happened in these months. Daily routine is no more the same old. My circle of friends has expanded but there are many who have left this poor country for a better education.
If everything went just like how a normal 20 year old's life would be, I would most probably be blogging not just in this artificial cold room of mine but maybe in a land with 4 seasons to experience with. Former classmates or schoolmates of my age or younger are already partying day and night with all the freedom at a unknown land to me. Be it being down under or in the UK or USA, these are friends I'm not sure at all if they'll be a chance to say hello again. Except for MMF perhaps. But with the advancement in technology I believe we will be connected, err digitally?

What are my plans many have asked? I have decided last year never to plan. Weird? Nonsense? No. I've tried planning my life. The road I was gonna embark. All listed out in my imaginations. Happily going my way and someday, something pops out and there goes the plan. Like one, I never knew we would have a new family member, expanding from 5 to 6 of us. Well, there's still space for the family in a 5 seater car. Haha, no my mum did not give birth to a little baby for us. She's too old for that, risky ya know.

There...this little rascal is part of family now though I don't quite fancy animals but I'm sure he can be a better sibling at times. Ha ha! It is weird thinking back on how we got this lil rascal. According to my memory, I was the one who feel in love with him first and then passed the bug to my sis and mum. That night itself we went to meet this lil cute thing. My mum was still pondering on getting him with me by her side saying "just bring him home!!". Being so tiny then, she was afraid we couldn't take care of it but now, he's turned into such a monster!!

Phew... this is more exhausting than going for a jog! No wonder I can never complete a post. Now, above's a lil of what's happening in my life if you're interested. I'm not promising I'll continue on the rest which is quite a lot but just pray hard I do.

Work tmr! Oh and this is weird but like what I've just posted in facebook, "I hope there's class EVERYDAY" (Ping Chien, you would know why! Hah)
